Healthy Walnut & Banana Muffins – The Perfect After School Snack!

Who Wants a yummmy Banana muffin?

We had so much fun baking in the kitchen after school. We decided to make some healthy, nutty, banana muffins. My ultimate grab and go!

 

My girls wanted to put sprinkles on the banana muffins because they seem to think EVERYTHING we bake needs to have sprinkles. But i got my way and convinced them to put crushed walnuts on top instead. I secretly think they enjoyed that more anyway.

 

The point of making these healthy banana muffins is so the kiddies and i have a healthy but also tasty treat for after school and during the week.

 



 

Here’s the recipe!

 

Ingredients

2 Cups of Almond meal
2 Eggs
1 Tablespoon of honey

1 Cup of Unsweetened Almond milk
2 Large bananas
2 Teaspoons of Baking powder
1 Tablespoon of Chia seeds
Half a cup of Walnuts
1 Teaspoon of Cinnamon
1 Tablespoon of Coconut oil
1 Teaspoon of Vanilla essence optional


Method

Preheat oven to 180°C
Combined all the dry ingredients Almond meal, Crushed walnuts, Cinnamon, Chia seeds, Baking powder into a large bowl.
Mash the bananas in a separate bowl and add the Eggs, Almond milk, Coconut oil, Vanilla essence and mix until all combined. I used an electric mixer.
Add All ingredients together and mix until well combined.
Spoon the mixture into paper baking cups.
Bake in preheated oven for 40-45 minutes. Remove from oven and let them rest for 5 minutes. 

This recipe should make around 14 muffins depending on the size of the paper baking cups.
