My kids love a sweet treat in their lunchboxes, but sometimes it can be hard to give them something nice, healthy, and allergen-free. At their school, it is a nut-free zone like many others, so I have to make things that are nut-free. I’ve finally found a recipe for nut-free bliss balls and the girls absolutely love them.
1 cup pitted prunes or dates
4 crumbled Weetbix
2 TBSP cocoa powder
1TSP Vanilla essence
1/3 cup desiccated coconut
Extra coconut for rolling
Step 1: In a food processor, blitz the pitted prunes/dates until they are a smooth consistency.
Step 2: Add in the crumbled weetbix. Add in cocoa powder, vanilla, and coconut. Blitz until completely combined.
Step 3: Using a teaspoon, spoon out the mixture and use your hands to roll into a ball. Pop the balls into the extra coconut and cover them in it.
Step 4: Put in the fridge to set. Store in a container in the fridge.
These nut free chocolate bliss balls can be made in larger batches and stored in the fridge. I love adding 1 or 2 in their lunchboxes.
