THE ULTIMATE ROAST PUMPKIN SALAD
There’s no secret that I’m a massive fan of a good salad. A delicious and vibrant healthy salad that will leave you feeling satisfied and guilt free. This salad can be amazing as a side dish or even as a main meal, perfect for work lunches and dinner too.
I absolutely love the taste of butternut pumpkin seasoned with Sammy MINGLE (all purpose seasoning) mixed in with some feta and walnuts and I’m in heaven!
To make this light and easy pumpkin salad follow this recipe
500g of pumpkin peeled and chopped into small bite sized pieces. (I used butternut)
2 Tablespoons of extra virgin olive oil
1/4 Red onion
1/4 Red Capsicum
3 Tablespoons of Pumpkin seeds
2 Handful of Baby spinach leaves
1 Whole Baby cos
1 Handful of Wall nuts
1/4 Cup of Feta
These measurements will make a couple servings
Toss the pumpkin pieces into an oven proof dish with extra virgin olive oil and seasoning. Place the dish into the oven for 15-20 mins at 200 degrees on fan-forced. Turn the pumpkin half way through. Allow the pumpkin to cool slightly before mixing in with the remaining ingredients.
